Travel Cakes Upgraded

I never knew there was such a thing as a travel cake until I came to the Academy. I learnt that a travel cake is “a dessert, or concept of a cake that can withstand many days (8 to 30 days) without refrigeration, and not ruined by the jolts of traveling”.

Of course this concept has evolved over time and is used to now denote cakes that are more elaborate than your regular tea time cakes which are your simple loaf cakes.

So yesterday’s class with Chef Rakhee was a whole day of making several cakes and importantly learning about decorating them in different elaborate styles like a Gourmand Glaze (a crunchy chocolate coating like the one on your Magnum Ice Cream), piping in fillings, making custard toppings etc.

We also learnt about basic egged and eggless cake recipes that could be flavoured differently according to your creativity.

We made 3 cakes, A Chocolate Raspberry cake, Pineapple and Coconut cake and a Marble cake.

We practiced making Gourmand Glaze, Fruit Gel’s, Cremeaux icing, Chocolate Nutella Ganache and applied them in different ways to decorate our cakes.

The results were both beautiful and delicious!
