Chocolate Cakes!

Day started with me making that Chocolate Ganache for the afternoon class. Imagine a huge bowl of cream and melted dark chocolate whisked together into a gooey chocolate sauce! I was tasked with doing this

Morning session was a Theory revision class on Stocks and Soups. Learnt about all the different types of Stocks and Soups and I found it interesting that the idea of soups (and stocks) actually originated from cold countries, were made to keep people warm, and was also a way of using leftover meats and bones to minimise wastage.

It was then time to hunt for lunch. Decided to go to town a little and ordered a Paneer Tikka Briyani, a side dish of Stuffed Mushroom Tikkas from a place called Pal’s Fish Corner (yes they do vegetarians) and to round it off, ordered in also Rasmalai from Sweet Bengal. All these items were local recommendations.

Everything was delicious and was definitely a thumbs up!

Afternoon class was all about decorating the Chocolate Cake that we had made yesterday.

First we sliced them up into 3 equal parts-learnt about measuring with a ruler, marking lines with a paring knife and flour and then slicing it apart.

It was then time to reassemble the cake, adding syrup to moisten the layer and then adding Chocolate Ganache and then doing 2 layers of Ganache-first the crumb coating and then the final layer of Ganache and some chilling in the fridge in between. Finally came the decorations! Pleased that our efforts looked good in the end!

With that we wrap another day in Mumbai with a yoga session in the evening and preparing for the next day!
